Chicken & Barely Soup
4 chicken breasts
½ cup barely
5 ½ cups chicken broth (made from chicken bullion)
3 stalk celery chopped
3 large carrots
2 chopped tomatoes
2 cloves garlic minced
2 tablespoons soy sauce
½ teaspoon basil
A dash of oregano, thyme, cayenne pepper
2 tablespoons fresh parsley
Add everything but parsley and bring to a boil, cover and reduce heat. Simmer 1 ¼ hour, remove chicken, cup up, and add to soup with parsley and serve.
Cream of Mushroom Soup
2 tablespoons granulated chicken bullion
1 ½ cubes butter
2 packages of mushrooms, chopped small
1 ½ cups flour
6 cups 1 % milk
1 pint of cream
Chop mushrooms very small, sauté mushrooms in butter & bullion until dark in color. Add flour slowly until all butter is absorbed. Cook until scorched, add milk and cream slowly, and serve.
Homemade Croutons
Take 4 pieces of thick white bread, brush with butter, sprinkle with parmesan cheese, put in broiler, repeat on both sides, cut in squares, and serve over soup.
For different variations of soup just replace mushrooms with broccoli, asparagus, or any vegetable.
My Mom is such an amazing cook, these are her recipes. I made the barely one last week and it was divine, perfectly healthy, just what I need lately. I hope someone uses them. I saw the other girls posting recipes and that is something I can relate to and ENJOY

hey I am going to start a recipe blog and I expect you to supply lots of recipes on it. the top recipe I will really need to try.
I am so glad, oh man have a got a lot of recipes for you to post then, is it going to be a blog just for that? or will you add it to the one you already have, i might not be able to keep up if it's a whole new one
Yeah I will start a new one, this weekend I think. I will email you about so yu can add recipes to it whenever (no pressure to do it daily, just whenever you can or are reminded of something you love)
That soup sounds so yummy and I have almost all of the ingredients on hand! Can't wait to try it. I love trying new soups and yummy things when it starts to get cooler outside! Thanks!
